These fig bars feature a tender whole wheat crust and a smooth, naturally sweet fig filling. They are easy to make, with a freezing step that simplifies handling. Bake until golden, then cool completely for a delicious bar cookie that's ideal for Halloween gatherings.

- Set your oven to 350°F to start preheating.
- Combine the all-purpose and whole wheat flours, baking powder, and cinnamon in a medium bowl, whisking until well mixed.
- Using a stand mixer with the paddle attachment, mix the butter, brown sugar, and honey on low speed. Then increase to medium and beat until fluffy, about 2 to 3 minutes. Add the vanilla and egg, scraping down the bowl as needed. Reduce speed to low and slowly incorporate the flour mixture, mixing until the dough just forms.
- Line a 9-inch square baking pan with plastic wrap, letting about 2 inches hang over the sides. Take half of the dough and press it evenly into the pan. Use the overhanging plastic to lift the dough square out, wrap it tightly, and freeze it flat until needed.
- Spray the baking pan with baking spray, then line with parchment paper, again leaving a 2-inch overhang. Spray the parchment. Press the remaining dough into the pan evenly, cover, and freeze until needed.
- To make the filling: Place the figs, applesauce, orange juice, and honey in a food processor. Pulse until you get a smooth, thick paste, pausing to scrape the bowl as needed.
- Take both dough pieces out of the freezer. Spoon the fig paste onto the crust in the pan and spread it evenly. Unwrap the second dough piece and lay it on top of the fig layer, pressing down gently.
- Bake for 35 to 40 minutes, until the top is light golden. Let it cool fully before cutting into bars; this will take at least 2 hours.
