This festive guacamole is shaped into Frankenstein's face and decorated with blue corn chips for hair, olives for eyes and bolts, and veggie scars and mouth. It's a creepy-cute appetizer perfect for Halloween parties and best served immediately.

  1. Chop the Roma tomatoes and onion into small bits using a sharp knife and cutting board. Mince the garlic and cilantro finely. Set everything aside.
  2. Cut the avocados in half with a knife, remove the pits, and scoop the flesh into a large bowl. Mash with a fork or pastry cutter until smooth.
  3. Stir in the diced tomato, minced onion, garlic, cilantro, and optional avocado (if using) with a spoon. Squeeze the juice from half a lime into the mixture, keeping out any seeds.
  4. Spread the guacamole evenly onto a large plate in a broad rectangle shape.
  5. Decorate the guacamole: arrange blue corn tortilla chips at the top for hair, with the pointed ends facing down. Place sliced black olives for the eyes and neck bolts.
  6. Put the sour cream into a small zip-top bag, snip off a corner, and pipe pupils onto the olive eyes.
  7. Cut the red bell pepper into thin strips and use them to create one or two scars. Use shredded carrots to form the mouth.
  8. Serve right away for the best taste. Guacamole may darken if stored or left in a warm area.
