These cookies capture the essence of autumn with a blend of warm spices and reduced apple cider. A simple cinnamon glaze adds sweetness and a pretty finish. They're best enjoyed within a couple of days due to their moist texture.

  1. In a small saucepan, pour 1 and 3/4 cups of apple cider. Bring it to a boil over medium heat while stirring now and then. Lower the heat to a simmer and continue stirring occasionally until the liquid reduces to about half a cup. Set it aside to cool.
  2. Set your oven to 375°F. Cover two baking sheets with parchment paper or silicone baking mats.
  3. Using a stand mixer with the paddle attachment (or a hand mixer and a large bowl), beat the softened butter, brown sugar, and granulated sugar until the mixture becomes light and fluffy. Add the reduced cider, buttermilk, and egg, mixing until incorporated.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and allspice. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  5. Drop rounded tablespoons of dough (or use a small cookie scoop) onto the prepared sheets, spacing them about 2 inches apart. Bake for 9 to 11 minutes, until the edges turn a light golden brown. Let the cookies rest on the sheets for 1 minute, then transfer to a wire rack to cool completely.
  6. For the glaze, whisk together the powdered sugar and cinnamon in a small bowl. Gradually whisk in the reduced cider until you achieve a drizzling consistency. Drizzle the glaze over the fully cooled cookies and allow it to set.
  7. Keep the cookies in an airtight container. They are very moist and will only stay fresh for a couple of days.
