These Halloween Brownie Pudding Parfaits combine rich chocolate pudding and fudgy brownie bites in a glass, decorated with googly eyes and festive sprinkles. The pudding is made from scratch with half and half and chocolate chips, while the brownies are baked and cut into small pieces. Layer them in glasses with pudding and top with chopped sandwich cookies and sprinkles for a creepy-cute dessert.

  1. In a medium saucepan, whisk together 1 cup sugar, ½ cup cocoa, 3 tablespoons cornstarch, and ½ teaspoon salt until well combined. Slowly pour in 4 cups half and half, stirring to form a paste then a smooth liquid. Add 6 ounces semisweet chocolate chips and 1½ teaspoons vanilla extract.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and becomes creamy, about 10 minutes.
  3. Pour the pudding into a 1½-quart bowl. Let it cool on a wire rack, then refrigerate until cold. This can be made up to a day ahead.
  4. Preheat the oven to 350°F. Line a 9x13-inch baking pan with parchment paper.
  5. Melt 12 tablespoons unsalted butter and 4 ounces unsweetened chocolate together, then set aside to cool slightly.
  6. In a large bowl, beat 4 eggs with 2 cups sugar and a pinch of kosher salt. Stir in 1 teaspoon vanilla extract.
  7. With the mixer on low, add half of the melted chocolate mixture, then half of the dry ingredients (1 cup flour and 1 teaspoon baking powder). Mix in the remaining chocolate mixture, then the remaining dry ingredients until just combined.
  8. Spread the batter evenly in the prepared pan. Bake at 350°F for 25 minutes.
  9. Remove from the oven and let the brownies cool completely in the pan.
  10. Once cool, cut the brownies into 70 pieces by making 10 cuts horizontally and 7 cuts vertically.
  11. The brownies can be made a day ahead and stored in an airtight container.
  12. For the decorations, remove the chocolate side from several chocolate sandwich cookies and chop the remaining cookie parts. Set aside.
  13. Press the cream filling from the cookies into Halloween sprinkles, then chop the coated filling and set aside.
  14. Press a googly eye onto one side of each brownie bite. Place a layer of brownie bites at the bottom of a glass bowl or parfait glass, with the eyes facing outward and touching the glass. Cut brownie bites as needed to fit the layer.
  15. Spoon a layer of chocolate pudding over the brownie layer.
  16. Repeat layering brownie bites and pudding until the glass is full. Finish with a dollop of pudding on top, spreading it to cover the gaps between brownie bites.
  17. Garnish with the chopped sandwich cookies mixed with Halloween sprinkles and/or other Halloween decorations.
  18. Serve the parfaits cold.
