This Halloween Cookie Pizza is a fun, shareable dessert made from a pumpkin-spiced cookie dough that's rolled into a 12-inch round and baked until golden. Once cooled, it's frosted with a black almond-flavored buttercream and decorated with assorted Halloween candies. Perfect for parties, it can be stored in the fridge for up to a week.

Directions

In a large bowl, beat the softened butter and brown sugar until creamy. Mix in the pumpkin puree and molasses until smooth.

In another bowl, whisk together the flour, pumpkin pie spice, baking soda, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture, stirring until a stiff dough forms.

Shape the dough into a flat round disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preheat your oven to 350°F.

Unwrap the chilled dough and place it between two sheets of parchment paper. Roll it out to about 12 inches in diameter.

Remove the top parchment sheet and transfer the dough (still on the bottom parchment) onto a large baking sheet or pizza pan.

Bake for 20–25 minutes, until the cookie is slightly puffed and golden brown. Let it cool completely.

For the frosting, beat the remaining 1/3 cup butter with 1 cup of confectioners' sugar, almond extract, and 1 tablespoon of heavy cream. Add another cup of sugar and another tablespoon of cream, mixing well. Repeat with the last cup of sugar and cream. If the frosting is too stiff, add an extra tablespoon of cream.

Tint the frosting with black food coloring, then spread it over the cooled cookie pizza. Decorate with assorted Halloween candies.

Store any leftovers in an airtight container in the refrigerator for up to one week.
