These Halloween Jello Roll Ups combine firm gelatin ghosts with colorful marshmallow-studded Jello rolls on skewers. Start by making orange-flavored gelatin ghosts, then prepare Jello rolls using your favorite flavors. Once set, slice and thread them onto skewers with marshmallow supports for a fun, festive treat.

- Sprinkle the unflavored gelatin into a small bowl.
- Add the cold water and whisk until the gelatin is completely dissolved.
- Stir in the sweetened condensed milk and set the bowl aside.
- Boil ½ cup of water, then pour it into the gelatin mixture and whisk until smooth.
- Add the orange extract and stir to combine.
- Place your ghost mold on a small baking sheet or cutting board to make it easier to transfer to the refrigerator without spilling.
- Pour the gelatin mixture into the ghost molds, leaving a little space at the top so the ghosts will come out easily later. Avoid filling to the brim to prevent sticking.
- Refrigerate the mold for 2 to 3 hours until the gelatin is firm.
- Once firm, remove the ghosts by pushing upward from the bottom of each mold until the ghost pops out.
- Pour the package of Jello into a medium bowl.
- Add 1 cup of boiling water to the bowl and whisk until the Jello is fully dissolved.
- Stir in the mini marshmallows and microwave on high for 1½ minutes. The marshmallows will become slightly puffy.
- Whisk the mixture until it is smooth.
- Pour the Jello mixture into a 9x13-inch pan.
- Refrigerate for 2 hours or until firm. The marshmallow layer will naturally separate from the Jello as it chills, creating two distinct colors.
- When firm, gently pull up the sides of the Jello to remove it from the pan. You can place it on a cutting board.
- Starting from the middle of the long side, roll the Jello as tightly as possible.
- Use a sharp knife to cut slices about ½-inch wide. Ensure slices are thick enough to easily slide onto a skewer without breaking.
- Repeat steps 10 through 18 for each additional color of Jello roll you want to make.
- Take a 10-inch skewer. You can mix and match colors as you like.
- When placing a Jello roll on the skewer, pierce the tail end first and slide it down as far as you want. This prevents the roll from unraveling.
- Ghosts slide more easily, so to keep them in place, first thread a mini marshmallow onto the skewer, then add the ghost. The marshmallow supports the ghost. It works best to put ghosts on top of Jello rolls or between two rolls.
- Arrange all assembled skewers on a platter and serve.
