These Halloween Monster Cookies are a fun and festive dessert that combines rich chocolate flavor with colorful candy pieces. Topped with mini candy eyeballs, they are easy to make and sure to be a hit at any Halloween gathering.

  1. Start by heating your oven to 375° F. Prepare two or three baking sheets by lining them with non-stick parchment paper.
  2. In a large mixing bowl, combine the 1.5 cups of all-purpose flour, 2 tsp of baking powder, 1 cup of brown sugar, 2 tbsp of black cocoa (regular cocoa works as a substitute), 1/4 cup of cocoa powder, 2 large eggs, 12 tbsp of melted unsalted butter, and 1 tsp of vanilla extract. Mix until the batter is mostly blended, then fold in the 1/2 cups of Halloween candy, making sure to save the 40 mini candy eyeballs for later.
  3. Scoop the dough onto the prepared baking sheets. Using a small ice cream scoop helps keep them uniform in size, which should be roughly 3 level tablespoons per cookie.
  4. Bake the cookies for 10 to 12 minutes. As soon as you take them out of the oven, gently press the reserved mini candy eyeballs into the warm cookies so they stick in place.
  5. Let the cookies rest on the baking sheets for 10 to 15 minutes to set. Afterward, transfer them to a wire rack to cool completely.
