Halloween Monster Cookies

These monster cookies start with a cream cheese and butter dough, tinted orange and loaded with chocolate chips, Oreo minis, and Chips Ahoy. After a quick chill, shape into balls, coat with sprinkles, bake, and top with candy eyes for a festive Halloween treat.

- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a stand mixer bowl, beat together the butter, cream cheese, egg, and vanilla on medium speed for 2-3 minutes until light and fluffy.
- Add the cake mix and beat well, scraping down the sides of the bowl as needed.
- Add orange gel food coloring and mix thoroughly, scraping the bowl to prevent streaks. Start with about 1 tsp and add more until the color is bright orange.
- Mix in the mini chocolate chips and white chocolate chips.
- Roughly chop the Oreo minis and mini Chips Ahoy, then fold them into the batter by hand until evenly distributed.
- Chill the dough in the refrigerator for 30 minutes.
- Using a cookie scoop or large spoon, shape the dough into balls and roll each ball in Halloween candy sprinkles.
- Place the dough balls on the prepared baking sheet, leaving 1½ to 2 inches of space between each.
- Bake at 350°F for 10-12 minutes.
- Remove from the oven and immediately press candy eye sprinkles onto the tops of the warm cookies.
- Serve and enjoy!
