These Halloween panna cotta eyeballs are a fun and creepy treat perfect for parties. With a creamy base and a sweet gummy iris, they look convincingly real. A drizzle of strawberry 'blood' adds the final gruesome touch.

Ingredients

Directions

  1. Place the milk in a medium saucepan, then sprinkle unflavored gelatin over it and allow it to sit for 5 minutes to soften.
  2. Warm the mixture over medium-low heat while whisking often, until the gelatin dissolves completely, which should take a few minutes.
  3. Keeping the saucepan on the heat, add the sugar and heavy cream, stirring constantly. Continue heating until the mixture is very hot (but not boiling) and the sugar is fully dissolved.
  4. Take the saucepan off the heat once the sugar dissolves, then stir in the vanilla extract.
  5. Let the mixture cool slightly while you get the silicone molds ready. Lightly spray the molds with non-stick cooking spray and set them on a baking sheet to make transferring to the fridge simpler.
  6. Place a Lifesaver gummy into each mold cavity, writing side facing upward, and gently press it into the bottom.
  7. Pour the panna cotta mixture into each mold, filling them completely.
  8. Refrigerate the molds for at least 5 hours, or ideally overnight, until set.
  9. To unmold, run a thin knife around the edge of each silicone cavity to loosen the panna cotta, then carefully push each eyeball out onto a serving plate.
  10. Use the knife to trim away any extra panna cotta around the Lifesaver iris if necessary; it should come off without much effort.
  11. Snip the pointed ends off jelly beans and place one on each Lifesaver to create the pupil.
  12. Combine strawberry syrup with red food coloring to create a blood-like sauce, then drizzle it over each eyeball if you like.
