This Halloween Sprinkle Cookie Cake is a giant, shareable dessert perfect for parties. Made with a soft and chewy cookie base, it's packed with mini chocolate chips and colorful sprinkles. Bake it in a pizza pan for a fun, festive treat that's easy to decorate.

  1. Preheat your oven to 350°F. Lightly coat a 14-inch pizza pan with cooking spray.
  2. In a medium bowl, whisk together 2 cups all-purpose flour, 2 teaspoons cornstarch, 1 teaspoon baking soda, and 1 teaspoon salt. Set aside.
  3. In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, cream together 3/4 cups unsalted butter (room temperature), 3/4 cups packed light brown sugar, and 1/4 cup granulated sugar until light and fluffy, about 2-3 minutes. Add 1 large egg (room temperature) and 2 teaspoons vanilla extract, mixing until combined. Scrape down the sides of the bowl.
  4. With the mixer on low speed, gradually add the dry ingredients and mix until incorporated. Then, still on low, add 1 cup mini semi-sweet chocolate chips and 1/4 cup sprinkle mix, mixing just until combined.
  5. Transfer the cookie dough to the prepared pizza pan. Using a spatula or your hands, flatten the dough so it barely reaches the edges (the dough will spread during baking). Ensure your pan is large enough to prevent overflow; alternatively, you can use a deep dish pan.
  6. Bake for 20-24 minutes, or until the cookie cake is lightly browned. Allow it to cool completely before decorating.
