These Halloween Sprinkle Cookies start with a soft sugar cookie base divided into neon green, orange, and purple doughs. Each cookie is a swirl of all three colors, coated in festive sprinkles, then baked to perfection for a delightfully creepy treat.

  1. Using an electric mixer, beat softened butter, brown sugar, and white sugar together in a large bowl until light and fluffy. Then add the egg and vanilla extract and mix until incorporated.
  2. Stir in the flour, baking powder, and salt, mixing just until the dough comes together (it will seem crumbly). Fold in the white chocolate chips.
  3. Separate the dough into three equal parts. Drop a different neon food coloring (green, orange, purple) into each portion and mix until the color is even throughout.
  4. Take a small piece from each of the three colored doughs and press them together to form a ball, letting the colors swirl slightly. Repeat this process to make a total of 6 dough balls.
  5. Roll the top and sides of each dough ball in Halloween sprinkles, then place them on a parchment-lined baking sheet. Chill the cookies in the refrigerator for at least 30 minutes.
  6. Preheat your oven to 375°F while the cookies are chilling.
  7. Bake the cookies for 18 minutes. As soon as they come out of the oven, if you see any bare spots, press a few extra sprinkles onto them. Let cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
