  1. In a large bowl, use an electric mixer to beat together the softened butter, brown sugar, and white sugar until light and fluffy. Then mix in the egg and vanilla extract until well combined.
  2. Add the flour, baking powder, and salt to the bowl. Stir just until the dry ingredients are incorporated; the dough will appear quite crumbly. Fold in the white chocolate chips.
  3. Split the dough into three equal parts. Add a different food coloring (neon green, orange, purple) to each portion and mix until the color is evenly distributed.
  4. Take a small amount from each of the three colored doughs and press them together into a ball, allowing the colors to swirl slightly. Repeat to form 6 cookies total.
  5. Roll the tops and sides of each cookie ball in Halloween-themed sprinkles. Place them on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes.
  6. While the cookies chill, preheat your oven to 375°F.
