Ingredients
Directions
- Preheat oven to 375°F.
- In a large bowl, beat ¾ cup softened butter, 8 ounces softened cream cheese, 1 cup sugar, ½ cup powdered sugar, 1 egg, and 1 teaspoon almond extract until fluffy.
- In a separate bowl, whisk together 2¾ cups all-purpose flour, ½ teaspoon baking powder, and ½ teaspoon salt.
- Add dry ingredients to creamed mixture and stir until a soft dough forms.
- Roll out dough and cut with cookie cutters. For crunchy cookies, roll thin; for soft cookies, aim for about 3/8 inch thick. Handle dough as little as possible.
- Place on greased baking sheets and bake for 8 to 10 minutes. Let cool completely.
- Make frosting by mixing ⅓ cup softened butter, 4½ cups powdered sugar, ¼ cup milk, ½ teaspoon vanilla extract, and ½ teaspoon almond extract with a hand mixer. If too thick, add a little more milk.
- Tint frosting orange with food coloring and frost the cooled cookies.
- Use orange decorating gel to add texture to the pumpkins. Sprinkle with orange sugar sprinkles, then add a green M&M for the stem and place on candy eyes.
