Halloween Voodoo Gingerbread Men

These Halloween voodoo gingerbread men are made from a spiced dough that is rolled thin, cut into shapes, and baked until crisp. After cooling, they are decorated with black, red, and white royal icing to create a creepy voodoo look. The dough needs to be chilled for at least 2 hours and the cut cookies frozen for 1 hour before baking for best results.

- In a bowl, combine the flour, cinnamon, nutmeg, allspice, cloves, baking soda, and salt using a whisk.
- Using an electric mixer on medium speed, cream the butter and brown sugar until light and fluffy, about 1 to 2 minutes. Pour in the molasses and crack in the egg, beating for roughly 1 minute until well blended. Turn the mixer to low and slowly incorporate the flour mixture. Split the dough into 4 parts, form each into a disk, and wrap individually in plastic. Refrigerate for at least 2 hours or up to overnight until solid.
- Take one disk from the fridge and allow it to soften a bit. On a surface dusted with flour, roll the dough to a thickness of 1/8 inch. Use a gingerbread man cutter to cut out shapes. Place them on a baking sheet lined with parchment. Put the sheet in the freezer for at least 1 hour or up to overnight. Scraps can be re-rolled once. Do the same with the other disks.
- Set your oven to 350°F. Bake the cookies until they are crisp and the edges start turning brown, typically 10 to 15 minutes. Move them to a wire rack to cool fully. Use black, red, and white royal icing to decorate as you like. Let the icing set for 30 minutes.
