These baked donuts are made with gluten-free flour, cacao, and coconut sugar for a nutritious twist. Decorated with white and dark chocolate chips, raspberries, and goji berries, they're spooky and delicious. Store them in the fridge or freezer for lasting enjoyment.

  1. Set your oven to 350°F.
  2. Lightly coat two donut pans with oil. (Check the notes for which pan I used.)
  3. In a big bowl, whisk together 1 cup gluten-free all-purpose flour, 1/3 cup cacao powder, and 2 teaspoons baking powder until evenly mixed.
  4. Melt 2/3 cup coconut oil in the microwave (30-45 seconds). In another bowl, combine the melted oil and 1/2 cup coconut sugar. Beat in the 2 eggs one by one, stirring continuously. Then mix in 1/2 cup unsweetened almond milk and 2 teaspoons vanilla extract.
  5. Create a well in the center of the dry mix, then slowly pour in the wet ingredients while stirring gently. Stop as soon as combined; avoid overmixing.
  6. Transfer the batter to a piping bag or a zip-top bag with a small corner snipped off. Pipe it evenly into 12 donut cavities.
  7. Bake for 12–15 minutes, until a toothpick inserted comes out clean. Allow them to rest for 10 minutes, then take the donuts out of the pan.
