Healthy Baked Halloween Donuts

These baked donuts are made with gluten-free flour, cacao, and coconut sugar for a nutritious twist. Decorated with white and dark chocolate chips, raspberries, and goji berries, they're spooky and delicious. Store them in the fridge or freezer for lasting enjoyment.

- Set your oven to 350°F.
- Lightly coat two donut pans with oil. (Check the notes for which pan I used.)
- In a big bowl, whisk together 1 cup gluten-free all-purpose flour, 1/3 cup cacao powder, and 2 teaspoons baking powder until evenly mixed.
- Melt 2/3 cup coconut oil in the microwave (30-45 seconds). In another bowl, combine the melted oil and 1/2 cup coconut sugar. Beat in the 2 eggs one by one, stirring continuously. Then mix in 1/2 cup unsweetened almond milk and 2 teaspoons vanilla extract.
- Create a well in the center of the dry mix, then slowly pour in the wet ingredients while stirring gently. Stop as soon as combined; avoid overmixing.
- Transfer the batter to a piping bag or a zip-top bag with a small corner snipped off. Pipe it evenly into 12 donut cavities.
- Bake for 12–15 minutes, until a toothpick inserted comes out clean. Allow them to rest for 10 minutes, then take the donuts out of the pan.

- Keep the donuts in a sealed container in the fridge for up to a week, or freeze for up to 3 months.
