- Add the pumpkin—whether canned or fresh—and all the chopped vegetables to the slow cooker.
- Sprinkle in the spices and white sugar.
- Pour in the vegetable broth and water, then stir everything together.
- Put the lid on and cook on the low setting for 8 hours.
- Carefully blend about three-quarters of the soup with an immersion blender, or blend the entire batch if you want a completely smooth consistency.
- Ladle into bowls and let each person stir in a tablespoon of heavy cream. Top with chopped green onion if you like.
