This straightforward recipe turns 1kg of peeled pumpkin wedges into a flavorful accompaniment using just olive oil and fresh thyme. By roasting at 200C (180C fan/Gas 6) for 20 minutes, the pumpkin develops a tender interior with beautifully crisp edges.

  1. Set your oven to 200C, 180C for fan-assisted models, or Gas Mark 6 and allow it to warm up fully.
  2. Arrange the pumpkin wedges on a large, flat baking tray. Pour the olive oil over them and turn until every piece is evenly coated. Add a generous amount of salt and pepper, then sprinkle the fresh thyme leaves on top if you have them.
  3. Put the tray in the oven and bake for roughly 20 minutes. The pumpkin is ready when it feels tender and the edges begin to turn golden and crisp. Taste to adjust the seasoning before serving.
