This recipe transforms a small pumpkin into creamy mashed pumpkin. After baking, the flesh is blended with butter, salt, and pepper for a savory side. It’s easy to prepare and perfect for fall meals.

  1. Thoroughly wash the pumpkin, removing any dirt or debris, then cut off the stem.
  2. Place the cleaned pumpkin in an oven preheated to 375 °F (190 °C) and bake for about 45 minutes per 250 grams. A pumpkin under 500 grams works best.
  3. Take the pumpkin out of the oven and let it rest for 5–10 minutes.
  4. While it rests, gather salt, butter, and a pepper mill.
  5. Using a large knife or cleaver, cut the pumpkin in half.
  6. Scoop out the seeds and stringy pulp. You can roast the seeds separately; discard the pulp.
  7. Peel the skin away from the flesh.
  8. Put the hot pumpkin flesh into a food processor with salt, pepper, and butter to taste, then blend until smooth.
