Ingredients
Directions
- Thoroughly wash the pumpkin, removing any dirt or debris, then cut off the stem.
- Place the cleaned pumpkin in an oven preheated to 375 °F (190 °C) and bake for about 45 minutes per 250 grams. A pumpkin under 500 grams works best.
- Take the pumpkin out of the oven and let it rest for 5–10 minutes.
- While it rests, gather salt, butter, and a pepper mill.
- Using a large knife or cleaver, cut the pumpkin in half.
- Scoop out the seeds and stringy pulp. You can roast the seeds separately; discard the pulp.
- Peel the skin away from the flesh.
- Put the hot pumpkin flesh into a food processor with salt, pepper, and butter to taste, then blend until smooth.
