Ingredients
Directions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together 3 cups flour, ¼ teaspoon baking soda, ¾ teaspoon salt, and 1 teaspoon baking powder. Set aside.
- In a separate bowl, beat 1 cup (2 sticks) of room-temperature butter, 2 ounces of softened cream cheese, and 1 ¼ cups sugar until light and fluffy.
- Add 1 teaspoon vanilla extract, 1 egg, and 2 to 3 drops of purple gel food coloring. Beat until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. If the dough gets too thick for your mixer, use a spoon to stir in the last bits of flour.
- Scoop heaping tablespoons of dough and roll into balls. Dip each ball into Halloween sprinkles, leaving the bottom free of sprinkles.
- Place the dough balls on the prepared baking sheet and gently press them down with the bottom of a cup. Press candy eyes into the tops of the cookies.
- Bake for 10 to 12 minutes, until the bottoms are just beginning to brown. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
