These delicious cookies combine a buttery oat base with crunchy pecans and a rich maple glaze. The dough is chilled for texture, then baked until golden. A simple powdered sugar icing with maple syrup adds the final sweet touch.
Ingredients
Directions
- Melt the butter using either a stovetop or microwave method.
- In a mixing bowl, combine the melted butter with brown sugar and maple syrup. While a stand mixer works well, a hand mixer or even a spoon can be used.
- Beat in the egg and vanilla extract until the mixture becomes smooth. Set aside.
- In another bowl, whisk together flour, rolled oats, cinnamon, baking soda, and salt. Gradually add this dry blend to the wet ingredients, mixing until incorporated.
- Stir in the pecans.
- Cover the dough and refrigerate for 30 to 60 minutes so it firms up.
- Preheat oven to 350°F. Scoop chilled dough onto a lined baking sheet and bake for about 10 minutes; larger cookies may need extra time.
- While cookies bake, prepare the icing by combining powdered sugar, 2 tablespoons maple syrup, 1 tablespoon melted butter, and a pinch of salt. If the icing is too thick, add a little milk until it reaches a drizzling consistency.
- Allow cookies to cool completely, then drizzle with icing or dip them in. Enjoy!
