These Peanut Butter Chocolate Mummy Cookies are perfect for Halloween. Start with a soft peanut butter cookie base, top with rich chocolate ganache, and finish with a drizzled vanilla glaze and candy eyes. Easy to make and fun to decorate, they're a treat that looks as good as it tastes.

  1. Set the oven to 350°F and place parchment paper or a Silpat mat on a baking sheet.
  2. In the bowl of a stand mixer, beat the butter for 1-2 minutes until creamy.
  3. Add both sugars and continue beating for another 2 minutes.
  4. Crack in the eggs one at a time, then add the vanilla.
  5. In a separate medium bowl, whisk together the flour, baking soda, and baking powder.
  6. Gradually incorporate the dry mixture into the wet, mixing just until combined (about 1 minute).
  7. Scoop dough by 1½ tablespoons and lightly flatten with your hands. Bake for 10 minutes.
  8. Let the cookies cool completely on the pan.
  9. In a heat-safe bowl, combine chocolate chips and heavy cream. Microwave in 30-second bursts for 1 minute total, then stir until smooth.
  10. Spread the chocolate ganache over the cooled cookies and let it set.
  11. In a bowl, mix powdered sugar, cream, and vanilla until smooth and drizzleable.
  12. Drizzle the glaze diagonally across the cookies to create mummy wraps.
  13. Place candy eyeballs onto the glaze and allow it to set.
