These Peanut Butter Chocolate Mummy Cookies are perfect for Halloween. Start with a soft peanut butter cookie base, top with rich chocolate ganache, and finish with a drizzled vanilla glaze and candy eyes. Easy to make and fun to decorate, they're a treat that looks as good as it tastes.

- Set the oven to 350°F and place parchment paper or a Silpat mat on a baking sheet.
- In the bowl of a stand mixer, beat the butter for 1-2 minutes until creamy.
- Add both sugars and continue beating for another 2 minutes.
- Crack in the eggs one at a time, then add the vanilla.
- In a separate medium bowl, whisk together the flour, baking soda, and baking powder.
- Gradually incorporate the dry mixture into the wet, mixing just until combined (about 1 minute).
- Scoop dough by 1½ tablespoons and lightly flatten with your hands. Bake for 10 minutes.
- Let the cookies cool completely on the pan.
- In a heat-safe bowl, combine chocolate chips and heavy cream. Microwave in 30-second bursts for 1 minute total, then stir until smooth.
- Spread the chocolate ganache over the cooled cookies and let it set.
- In a bowl, mix powdered sugar, cream, and vanilla until smooth and drizzleable.
- Drizzle the glaze diagonally across the cookies to create mummy wraps.
- Place candy eyeballs onto the glaze and allow it to set.
