These pecan pumpkin waffles combine warm pumpkin pie spice with crunchy pecans for a delicious autumn treat. The batter is made fluffy by folding in stiffly beaten egg whites. Serve with maple syrup for a perfect breakfast.

- In a large bowl, whisk together the flour, brown sugar (if using), baking powder, pumpkin pie spice, and salt until well combined.
- Separate the eggs. Beat the egg whites until stiff peaks form. In a separate medium bowl or measuring cup, combine the buttermilk, canned pumpkin, melted butter, maple syrup, and egg yolks. Whisk until smooth, then gently fold in the beaten egg whites.
- Pour the wet mixture into the dry ingredients and fold together until just combined—do not overmix; a few lumps are fine. Add the chopped pecans and fold with 2 to 3 stirs.
- Cook the waffles in your waffle iron according to the manufacturer's instructions. For extra crispiness, place finished waffles on a wire rack in an oven set to the lowest temperature to keep them warm while you cook the rest.
