This puffed pear pancake, baked in a hot skillet, combines tender slices of ripe pear with a light egg batter. A homemade cinnamon-maple syrup adds sweet, spiced flavor, and a dusting of powdered sugar finishes it beautifully.

  1. Set your oven to 450°F and put a 12-inch cast iron or other oven-safe skillet inside to heat up.
  2. In a small bowl, combine the pear slices with the cinnamon, nutmeg, and sugar.
  3. In a medium bowl, beat together the eggs, flour, milk, vanilla, and salt until smooth.
  4. Carefully take the hot skillet out of the oven and add the butter, swirling until melted and coating the bottom.
  5. Layer the pear slices over the bottom of the skillet, then pour the batter over them.
  6. Bake for about 20 minutes, until the pancake is puffy and golden brown.
  7. While the pancake bakes, warm some real maple syrup and stir in any leftover cinnamon mixture from the pear bowl to create a warm cinnamon-maple syrup.
  8. Slice the pancake into wedges, drizzle with the cinnamon-maple syrup, and dust with powdered sugar if you like.
