This pumpkin baked oatmeal combines oats, pumpkin, and warm spices for a hearty breakfast. You can prep it the night before by chilling the assembled dish, then bake it in the morning. The result is a warm, fragrant dish perfect for fall mornings.

- In a large bowl, stir together the oats, pecans (if using), dried cranberries (if using), pumpkin spice, cinnamon, baking powder, and salt. In a separate bowl or liquid measuring cup, whisk the milk, canned pumpkin, maple syrup, eggs, and vanilla. Pour the wet mixture into the dry ingredients and mix until just combined. Transfer the batter to a lightly greased 7x11-inch baking dish.
- Cover the dish and refrigerate overnight (or at least 8 hours). If you're short on time, you can bake it immediately—see notes for adjustments.
