These pumpkin bars are a simple dessert made with a spiced pumpkin batter baked in a 9x13 pan. After cooling, they're topped with a creamy cinnamon cream cheese frosting and cut into squares. Perfect for autumn gatherings or a cozy snack.

- Set your oven to 350°F and coat a 9x13-inch baking pan with nonstick spray. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In another large bowl, whisk the eggs, vegetable oil, brown sugar, granulated sugar, and pumpkin puree until smooth. Pour the dry ingredients into the wet mixture and stir just until combined. Spread the batter evenly in the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Let the bars cool completely.
- While the bars cool, make the frosting: In a large bowl, use a hand mixer or a stand mixer with the paddle attachment to beat the softened cream cheese and butter until light and fluffy. Add the confectioners' sugar and beat until combined, then mix in the cinnamon, vanilla extract, and a pinch of salt.
- Once the bars are completely cool, spread the frosting evenly over the top using an offset spatula. Cut into squares and serve.
