Pumpkin Blondies

This recipe yields soft, spiced pumpkin blondies studded with chocolate chips. After mixing the batter, bake until a toothpick comes out clean, then cool and cut into bars.

- Set your oven to 350°F. Line a 9x13-inch baking pan with parchment paper, and lightly coat the paper with butter or nonstick spray.
- In a large mixing bowl, combine the flour, pumpkin pie spice, baking soda, and salt, whisking them together thoroughly.
- Using an electric mixer, beat the butter until it's light and creamy. Add the sugar and continue beating until the mixture is fluffy. Then mix in the egg, pumpkin puree, and vanilla extract. Gradually incorporate the flour mixture, mixing just until combined. Finally, use a rubber spatula to fold in the chocolate chips.
- Spread the batter evenly in the prepared pan. Bake for 35 to 45 minutes, or until a toothpick inserted in the center emerges clean. If the top browns too quickly before the middle is done, loosely cover with foil.
- Allow the blondies to cool in the pan for 20 minutes, then transfer them to a wire rack to cool completely. Slice into bars and serve.
