This pumpkin bread recipe yields a tender, flavorful loaf with warm spices like cinnamon, ginger, and nutmeg. - Position a rack in the middle of the oven and heat to 350°F. Prepare an 8x4-inch loaf pan by lining it with parchment paper so that it overhangs on the two long sides, then coat the parchment with cooking spray.
- In a medium bowl, combine the flour, baking soda, cinnamon, baking powder, salt, ginger, and nutmeg by whisking them together.
- In a large bowl, use an electric handheld mixer set to medium-high to beat the eggs, granulated sugar, pumpkin puree, melted butter, sour cream, and vanilla extract until the mixture becomes light and fluffy.
- Slowly add the dry ingredients to the wet mixture, beating on low just until combined. Pour the batter into the prepared loaf pan. If desired, sprinkle demerara sugar first and then cinnamon sugar over the top.
- Bake the bread until a toothpick inserted in the center comes out clean, which should take between 50 minutes and 1 hour. Move the pan to a wire rack and allow it to cool a bit before serving.
