These mini muffins blend pumpkin, spices, and a tender crumb, then get brushed with butter and rolled in cinnamon sugar for a donut-like finish. Baked at 350°F for 14-17 minutes, they yield 24 perfect little treats. Perfect for autumn breakfasts or snacks.

  1. In a bowl, combine the flour, baking powder, baking soda, salt, and pumpkin pie spice with a whisk.
  2. Use another bowl to whisk the pumpkin, ¼ cup melted butter (cooled slightly), vanilla extract, brown sugar, milk, and eggs.
  3. Pour the dry mixture into the wet mixture and stir until just incorporated. Avoid overmixing.
  4. Lightly coat a mini muffin pan with olive oil spray.
  5. Use a small cookie scoop to fill each of the 24 mini muffin cups with batter.
  6. Bake at 350°F for 14 to 17 minutes, testing with a toothpick; it should emerge clean when done.
  7. Transfer the baked muffins to a wire rack.
  8. Mix the cinnamon and ½ cup sugar in a small bowl. In another bowl, melt the remaining ¼ cup butter in the microwave.
  9. While still warm, brush each muffin with melted butter using a pastry brush, then immediately roll it in the cinnamon-sugar mixture to coat entirely. Repeat for all muffins, then place them back on the wire rack to cool completely.
