These baked pumpkin donuts are a fall favorite, packed with warm spices and pumpkin flavor. They're easy to make with a simple batter and finished with a buttery cinnamon-sugar coating. Perfect for a quick breakfast or autumn treat.

- Set your oven to 350°F. Grease two donut pans with butter or a nonstick cooking spray and set them aside.
- In a large bowl, combine the all-purpose flour, baking powder, kosher salt, ground cinnamon, pumpkin pie spice, and ground nutmeg. Whisk them together and set aside.
- In a medium bowl, whisk together the melted unsalted butter, packed brown sugar, and the egg. Then add the pumpkin puree, milk, and pure vanilla extract, whisking until everything is well combined. Pour the wet mixture into the dry ingredients and stir with a spatula just until combined.
- Spoon the batter into the prepared donut pans. Bake for 8 to 10 minutes, or until a toothpick inserted in the center comes out clean. Let the donuts cool in the pans for 5 minutes, then transfer them to a wire rack to cool further.
- While the donuts are cooling, prepare the topping: in a small bowl, stir together the granulated sugar, pumpkin pie spice, and cinnamon.
- Once the donuts are cool enough to handle, use a pastry brush to coat each donut with melted butter, then dip both sides into the spiced sugar mixture.
