- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together 1 cup pumpkin puree, 3/4 cup granulated sugar, 1/2 cup melted coconut oil, 1 large egg, and 1 tablespoon vanilla extract until smooth.
- In a separate medium bowl, whisk 1 1/4 cups all-purpose flour, 1 cup old fashioned oats, 1 tablespoon baking powder, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, 1 teaspoon pumpkin pie spice, and 1/2 teaspoon fine sea salt.
- Add the dry ingredients to the wet mixture and stir just until combined, being careful not to overmix.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10 to 13 minutes, until a toothpick inserted in the center comes out clean and the bottoms are lightly browned. If needed, bake 1 to 2 minutes more.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
