This pumpkin pie French toast bake combines brioche slices with a creamy pumpkin custard and a buttery crumble topping. It's assembled the night before and baked in the morning for a stress-free holiday breakfast. Serve with maple syrup for a sweet finish.

  1. Coat a 13x9-inch baking dish with cooking spray. Overlap the bread slices in the dish, arranging them in a shingled pattern.
  2. In a big bowl, combine the pumpkin, eggs, brown sugar, pumpkin pie spice, vanilla, and salt with a whisk. Gradually add the milk and cream, whisking until the mixture is smooth. Pour this custard over the bread, then cover and chill for at least 4 hours—overnight is best (up to 12 hours).
  3. In a medium bowl, use a fork to mix the melted butter, brown sugar, flour, oats, pecans, and salt until crumbly. Keep this topping in the fridge until you're ready to use it.
  4. Heat your oven to 350°F. With clean hands, break the crumble topping into pieces and scatter it over the soaked bread.
  5. Bake for 35 to 40 minutes, until the topping turns golden and the custard is firm. Serve warm, with maple syrup on the side.
