These savory pumpkin pancakes are filled with creamy spinach-ricotta and smoked salmon, then rolled into wraps. The recipe includes a playful option to shape one as a snake for children using olive eyes and a spinach tongue. Perfect for a Halloween-themed dinner.

- Dice the pumpkin into cubes, remove the skin, and cook until tender. While the pumpkin cooks, fry the spinach in oil with salt and pepper. Squeeze out any excess liquid from the spinach and mix it with ricotta cheese.
- Blend the cooked pumpkin into a smooth puree. Add the flour, milk, egg, and spices (salt, pepper, nutmeg). Mix until the batter is well combined.
- Heat a frying pan with a little oil. Fry the pancakes on both sides until golden. If you have trouble flipping, stir a bit more flour into the batter from step 2.
- Once all pancakes are cooked, spread each with a layer of the spinach-ricotta mixture and place a slice of smoked salmon on top. Roll the pancakes up tightly.
- For a fun presentation, shape one pancake wrap into a snake. Use a straw to cut two dots from the black olive for eyes, and a small strip of spinach for the tongue. My daughter loved it! Enjoy.
