This easy granola recipe combines pumpkin puree with warm spices, oats, nuts, seeds, and dried cranberries. It's baked low and slow until perfectly crunchy, making a delicious breakfast or snack. Store it in an airtight container for up to two weeks.

  1. Set your oven to 300°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk the pumpkin puree, maple syrup, coconut oil, sea salt, vanilla, cinnamon, ginger, clove, nutmeg, and allspice until smooth. Then stir in the oats, walnuts, pumpkin seeds, and coconut until everything is evenly coated.
  3. Spread the mixture evenly on the prepared baking sheet. Bake for 45 to 50 minutes, stirring every 10 to 15 minutes, until the granola is golden and crunchy.
  4. Let the granola cool completely, then mix in the dried cranberries. Store in an airtight container.
