This pumpkin-stuffed French toast combines creamy pumpkin filling with a crunchy pecan crust. Simply assemble sandwiches with a spiced pumpkin cream cheese mix, dip in egg wash and pecans, then pan-fry until golden. Serve with maple syrup for a decadent autumn treat.

- In a small bowl, combine cream cheese, pumpkin puree, maple syrup, and pumpkin pie spice. Spread this mixture onto four bread slices, then top with the remaining slices. Press the edges to seal the sandwiches.
- In a shallow dish, whisk together eggs and milk. Place chopped pecans on a plate. Dunk each sandwich into the egg mixture, then press it into the pecans to coat both sides evenly.
- Warm a frying pan over medium heat and coat with non-stick spray or butter. Cook each sandwich until golden brown and crispy on both sides.
- Serve with extra maple syrup and, if desired, pomegranate for garnish.
