These pumpkin waffles are easy to make with a simple batter of pumpkin puree, milk, eggs, and warm spices. Cook them in a waffle iron until golden, then serve with butter, syrup, and whipped cream for a delicious autumn treat.

- Get ready by heating your waffle iron to medium (around level 3 or 4). If you're not eating the waffles right away, preheat your oven to 175°F to keep them warm.
- In a large bowl, combine 1 cup pumpkin puree, 1 cup milk, 3 tablespoons sugar, 2 eggs, 1/4 cup melted butter, and 1 teaspoon vanilla extract. Whisk until smooth. Then add 1 1/4 cups all-purpose flour, 2 teaspoons baking powder, 1 1/2 teaspoons ground cinnamon, and 1 1/2 teaspoons pumpkin pie spice. Stir gently until just combined—avoid overmixing. If you like, fold in 1/2 cup chocolate chips.
- Pour about 1/2 cup of batter into the preheated waffle iron. Cook for roughly 2 minutes, or until the waffle iron signals it's done. Transfer cooked waffles to the warm oven if you're not serving them immediately.
- Serve the waffles warm with butter, syrup, and whipped cream.
