These Halloween cookies combine a soft peanut butter dough with Reese's Pieces and chocolate chips, then get a fun finishing touch with candy eyeballs pressed in right after baking. They're easy to make and perfect for a festive treat.

  1. Set your oven to 375°F. Line a baking sheet with a silicone mat or lightly coat with nonstick spray.
  2. In a mixing bowl, cream the softened butter and brown sugar until light and fluffy. Beat in the peanut butter until well combined, then add the vanilla and egg, mixing on low until incorporated.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the peanut butter mixture, mixing just until combined.
  4. Take the dough off the mixer and stir in the Reese's Pieces and chocolate chips. Do not add the candy eyes at this stage.
  5. Scoop the dough into 1.5-inch balls and place them on the prepared baking sheet, leaving a few inches between each to allow for spreading. Gently flatten each ball slightly.
  6. Bake at 375°F for 10 to 11 minutes, or until the edges just begin to turn golden.
  7. Remove from the oven and immediately press candy eyeballs into the warm cookies. Let them cool completely before serving.
