  1. Place butter in a large pot and melt over medium heat. Add the chopped onion and minced garlic, stirring occasionally, until they become soft and translucent, which takes about 5 minutes.
  2. Add the cubed pumpkin to the pot and cook for another 3 minutes, stirring to combine.
  3. Pour in the vegetable broth, then season with salt and black pepper. Bring the mixture to a boil, then lower the heat and let it simmer for 20 minutes, or until the pumpkin is fork-tender.
  4. Using an immersion blender, purée the soup directly in the pot until it is completely smooth.
  5. Stir in the heavy cream and warm the soup through. Taste and adjust the salt and pepper if needed. Ladle into bowls and serve hot.
