- Set your oven to 350°F and lightly coat an 18x13-inch sheet pan with cooking spray.
- In a stand mixer or large bowl with a hand mixer, beat the softened butter and light brown sugar until the mixture is light and fluffy.
- Add the eggs and vanilla extract, mixing until well incorporated.
- Add the flour, baking powder, and salt, mixing on low speed first then increasing. Beat just until combined, scraping the bowl's sides as needed.
- Gently mix in the white chocolate chips, semi-sweet chocolate chips, and 1 cup of the Halloween sprinkles until evenly distributed.
- Transfer the dough to the prepared pan and use your hands to press it evenly across the entire surface.
- Sprinkle the remaining 2-3 tablespoons of sprinkles on top, adjusting the amount to your liking.
- Bake for 20 to 23 minutes, until the edges turn golden and the center is just set.
- Allow the cookie bars to cool completely, then cut into squares and serve. Store leftovers in an airtight container for several days.
