These easy pumpkin cookies require only a box of spice cake mix, canned pumpkin puree, and chocolate chips. Simply mix, scoop, and bake for a chewy fall treat that's ready in under 30 minutes.

  1. Heat your oven to 350°F (175°C) and line a baking sheet with parchment paper so the cookies don't stick.
  2. Empty the spice cake mix into a large bowl. If you're using yellow cake mix instead, stir in 1 teaspoon of pumpkin pie spice for that autumn taste.
  3. Add the pumpkin puree and mix until the dough is smooth and fully combined. There's no need for eggs or oil—just these three ingredients.
  4. Gently fold in 1 cup of chocolate chips. You can pick mini chips, milk chocolate, white chocolate, or dark chocolate—whatever you like.
  5. Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12 to 14 minutes, until the cookies are soft but the edges are set. They won't spread much, so they'll stay plump and chewy.
  7. Take the cookies out of the oven and let them cool on the baking sheet for 5 minutes, then move them to a wire rack to cool completely.
