These sugar cookies are remarkably soft and puffy thanks to sour cream and a long refrigeration step. The dough is rolled on powdered sugar for a delicate sweetness, then baked just until puffy. Perfect for cutouts or simple drop cookies, they're a crowd-pleasing treat.

  1. Combine all dry ingredients by sifting them together in a bowl.
  2. In a separate bowl, beat together the butter, sugar, sour cream, and eggs. Then mix in vanilla and lemon juice (leaving out the juice is optional).
  3. Add about 2 cups of the flour mixture to the wet ingredients and mix well. Slowly incorporate the rest of the flour mixture until fully combined.
  4. Refrigerate the dough for several hours, or even overnight—the longer chilling time yields better results. When ready to bake, roll the dough to a thickness of 1/4 inch on a surface dusted with powdered sugar.
  5. Bake at 350°F for 8 to 10 minutes, just until the cookies puff up. Avoid overbaking.
