Sour Cream Cranberry Bars

These bars feature a buttery oat crust topped with a creamy cranberry filling and crumbly topping. They bake up golden and set, then are chilled before serving. A delicious make-ahead dessert for parties or holidays.

- Set your oven to 350°F to preheat.
- In a large bowl, use an electric mixer to cream the butter and brown sugar until fluffy. Stir in oats, 1½ cups flour, baking soda, and salt until well blended. Pack half of this mixture firmly into an ungreased 13x9-inch baking dish. Bake for 10 minutes.
- In a separate bowl, combine the dried cranberries, sour cream, sugar, lemon zest, vanilla extract, egg, and the remaining 2 tablespoons of flour. Whisk until smooth.
- After the crust finishes its initial bake, evenly spread the sour cream filling over it, then sprinkle the remaining crust mixture on top.
- Return to oven and bake for another 25 to 30 minutes, or until the filling is set and the top turns golden brown.
- Allow the bars to cool fully before slicing into squares.
- Keep in a sealed container in the fridge. Take out and bring to room temperature before serving.
