These sourdough discard apple fritters combine tangy starter with sweet apples and a simple glaze. Fry them until golden, then finish in the oven for a perfectly cooked treat.

  1. Start by peeling, coring, and cutting the apples into small pieces. Toss them with lemon juice and set aside.
  2. In a large bowl, combine the all-purpose flour, sugar, baking powder, kosher salt, and ground cinnamon.
  3. Add the whole milk, beaten eggs, and vanilla extract to the dry ingredients.
  4. Stir everything together until a thick batter forms.
  5. Gently fold in the diced apples until they are evenly distributed throughout the batter.
  6. Heat oil in a Dutch oven to 375°F. Once hot, drop spoonfuls of batter into the oil.
  7. Fry the fritters for about 2–3 minutes per side, then transfer to a wire rack to drain.
  8. If the fritters aren't cooked through, place them in a 350°F oven for 10 minutes to finish.
  9. While the fritters bake, prepare the glaze by whisking powdered sugar with 2–4 tablespoons of milk until smooth.
  10. Once the fritters are done, dip each one in the glaze and return them to the wire rack to set.
  11. Serve and enjoy your homemade sourdough discard apple fritters!
