Spice Cake Mix Pumpkin Chocolate Chip Cookies
These soft pumpkin cookies with spice cake mix and chocolate chips are a quick, delicious fall treat.

Combine pumpkin puree, egg, and vanilla, then stir in spice cake mix and optional pumpkin spice. Fold in chocolate chips, scoop onto a lined baking sheet, and bake at 350°F for 18-20 minutes. Cool on a wire rack for perfectly soft cookies.

- In a large bowl, mix together 1 can (15 oz) pumpkin puree, 1 beaten egg, and 1 teaspoon vanilla extract until well combined.
- Add 1 spice cake mix and 1 teaspoon pumpkin spice (if desired) to the wet mixture, then stir until a uniform dough forms.
- Gently fold in 1 bag of chocolate chips. The dough will be sticky.
- Using a cookie scoop, drop rounded portions of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake in a preheated 350°F oven for 18 to 20 minutes, then transfer the cookies to a wire rack to cool completely.
