These cookies combine the warmth of cinnamon and nutmeg with the tartness of fresh rhubarb. The dough comes together easily and bakes up soft and chewy. Enjoy them fresh from the oven or store for later.

- Set your oven to 350°F (175°C) to preheat.
- In a medium bowl, combine 2 1/2 cups all-purpose flour, 1 tsp baking powder, 1/2 tsp salt, 1 tsp ground cinnamon, and 1/2 tsp ground nutmeg. Whisk until blended.
- In a large bowl, beat 1 cup softened unsalted butter with 1 cup granulated sugar until the mixture is light and fluffy.
- Add 1 large egg and 1 tsp vanilla extract to the butter mixture, beating thoroughly.
- Slowly incorporate the dry ingredient mixture into the wet ingredients, mixing just until combined.
- Gently fold in 2 cups finely chopped fresh rhubarb.
- Drop rounded tablespoonfuls of dough onto ungreased baking sheets, spacing them a couple inches apart.
- Bake for 12 to 15 minutes, until the edges turn lightly golden.
- Transfer the cookies to wire racks to cool completely.
