These spooky Halloween cookies are soft, chocolatey, and studded with semi-sweet chocolate chips. Topped with candy eyeballs, they're perfect for a frightfully fun treat. The dough comes together quickly and bakes in just 11 minutes.

  1. Prepare a baking sheet by lining it with parchment paper. Preheat your oven to 350°F.
  2. In a large bowl or the bowl of a stand mixer, beat the butter and both sugars together on medium-high speed for about 2 minutes until creamy. If desired, add a few drops of black food coloring and mix until evenly colored.
  3. Add the egg and vanilla extract, then beat for another 2 minutes. Scrape down the sides of the bowl to ensure everything is incorporated.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined.
  6. Pour in the milk and mix briefly. Then fold in the chocolate chips until evenly distributed.
  7. Scoop about 2 tablespoons of dough per cookie, roll into balls, and place them on the prepared baking sheet. Gently press candy eyeballs into the top of each dough ball.
  8. Bake for approximately 11 minutes. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
