These spooky Halloween cookies feature a rich chocolate base studded with chocolate chips and topped with candy eyeballs for a creepy look. The dough comes together quickly with butter and both white and brown sugars. Bake until set and enjoy a fun treat perfect for Halloween parties.

- Prepare a baking sheet by lining it with parchment paper. Set the oven to preheat to 350°F.
- In a large mixing bowl (or the bowl of a stand mixer), beat the butter and sugars together on medium-high speed for roughly 2 minutes until creamy. If desired, add a few drops of black food coloring and mix until combined.
- Add the egg and vanilla extract, then mix for another 2 minutes. Scrape down the sides of the bowl.
- In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing on low speed after each addition, until fully incorporated.
- Pour in the milk and mix until combined. Then fold in the chocolate chips.
- Scoop approximately 2 tablespoons of dough and roll it into a ball. Place the dough balls on the prepared baking sheet. Gently press candy eyeballs into the top of each ball.
- Bake for 11 minutes. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
