Spooky Halloween Monster Mash Soup

This recipe turns a simple red or orange soup into a ghoulishly fun dish by adding handmade rice eyeballs with nori pupils. The eyeballs are supported by either a hidden ramekin or zucchini noodles, then topped with a Sriracha drizzle. It's an easy, playful way to get into the Halloween spirit.

- Warm your chosen soup on the stove or in the microwave—whatever works best for you.
- Rinse the sushi rice in a strainer under cold water until the water runs clear.
- In a medium saucepan, combine the uncooked rice with 1 cup of water and bring to a full boil.
- Turn the heat down to the lowest setting, cover the pot, and let the rice cook for 20 minutes.
- While the rice is cooking, use kitchen scissors to cut the nori sheet into small circles.
- Put the nori circles aside for later.
- When the rice is tender and fluffy, give it a stir with a fork, then transfer it to a bowl to cool until you can handle it.
- Take small amounts of rice in your palm, squeeze gently, and shape into balls. Press a nori circle into the center of each ball to create the 'pupil'.
- To keep the eyeballs above the soup, place a small ramekin or dip bowl upside down in the middle of the serving bowl before pouring in the soup. This acts as a hidden shelf. If you're using spiralized zucchini noodles, you can skip the bowl because the noodles will hold the eyeballs up.
- Drizzle Sriracha over the soup (leave it out if children will be eating), then arrange the rice eyeballs on top.
- Add any final spooky touches and serve!
